CANNOLI CUPS

A lovely member of PBC couldn’t wait to bake some cannolis in our next meeting to share her Italian heritage with the team and of course, to indulge in some comfort food at the same time!

Now, these are far from conventional cannolis but they were the perfect, easy treat for a couple of university students to create in a short span of time. And they tasted divine! We used a lovely recipe from @cookingclassy and if you would also like to try it out, here are a few words of advice.

OUR TOP THREE TIPS:

  • In the beginning, the dough may seem very dry even with the recommended 8 tbsp of apple juice but have faith! It will be exactly the right texture once cooled.
  • Bring the ricotta and mascarpone cheese down to room temperature before attempting to integrate them BUT refrigerate it for at least an hour after to ensure the right piping consistency.
  • Use mini chocolate chips to get that hint of chocolate in every bite!
