BROOKLYN BLACKOUT CHOCOLATE CAKE

From making pudding to decorating with a ganache frosting, this cake involved the whole team in a variety of tasks and we sure had fun going at it!

For our very first inaugural meeting, the decadent Brooklyn Blackout Cake! Inspired by the spirit of Valentine’s Day, the celebratory mood of our very first gathering and a nifty little recipe by @chelsweets, every bite of this cake was intended to be rich, soft and full of flavour. And I think we can proudly claim it did!

OUR TOP THREE TIPS:

  • Make sure the cakes are completed cooled before decorating
  • Add 1/8 cup more flour than the recipe calls for
  • Refrigerate the chocolate ganache frosting to achieve piping consistency
  • NOTE: We made buttermilk by souring whole milk. This may cause the batter to look a little split – that’s okay and it will bake into beautiful, soft sponge cakes!
